      Two years at Paul Manu in Paris to learn the art of sugar, six years at Fauchon to explore the paths of Haute Pâtisserie, with his friend Pierre Hermé; Frédéric Cassel finally opened a shop in 1994 in Fontainebleau, where he can give free rein to his creativity and talent. Nature and the forest became a source of inspiration.
